So, there is a recipe that I just love to make. It is super easy and makes for a delicious, no fuss dinner. The recipe is for chicken taco filling. You make it in the crockpot, so it cooks while you get things done! And who doesn't love tacos?

It only requires 3 ingredients: a pound of chicken breast, a pack of taco seasoning, and a can of Rotel. All you have to do is put the chicken into the crockpot. Then you mix the Rotel and the taco seasoning together, and pour it over the chicken. Cook it on low for 4-5 hours or on high for 2-3 hours. That is it! It will fall apart easily, and you can shred it for your tacos.

Now, all you need is tortillas and your favorite taco toppings. You have a meal that your family will love, and you didn't have to spend all night in the kitchen. I hope you enjoy this as much as I do! Let me know what you think.

That recipe sounds delicious and easy to make.  Not to mention the easy clean up of using a crockpot.  Thanks for the idea!  Have you tried any other variation of this recipe?  Now that Mexican food is on the mind I think making as you stated and switching the taco seasoning for enchilada seasoning would be good as well.
