When you begin learning to can your own food, it seems confusing and, daunting to know what foods to pressure can and, what foods can be water bath canned. The simple answer is acidity determines how to can foods. Low acid foods such as meats and most vegetables must be pressure caned to be safe for consumption later. High acid foods like pickles, jams or preserves and, most fruits can be safely caned in a water bath canner. If you are in doubt, seek out a recipe for the specific food you want to can at home.
