I really do rely on my own to get me through super busy weeks! There are so many recipes online, it can be overwhelming. I also think recipes that others have tried and can vouch for are the best ones, so I'm happy to help you get started. I'd also love to hear from others so I can add to my own recipe collection! This yummy Chicken & Rice recipe is comfort food that never fails BUT you do need to be in the house for this one so it's a weekend recipe unless you work from home as it's best to stir it once in a while: 3-4 boneless skinless chicken breasts, cut into cubes 2 10 3/4 oz cans of cream of chicken soup 1 cup chicken broth (any kind will do but low sodium ones have less flavor in slow cooking so I recommend the regular salt kind) 1/2 large onion -- chopped 1 cup long grain rice, uncooked (long cooking rice, not the minute rice kind) Add salt and pepper (to taste) *************** Spray your slow cooker with olive oil (I always do this to prevent sticking). Mix all ingredients thoroughly in a large bowl. Pour into 6-quart slow cooker. Cover and cook on low for 4-6 hours. Stir every hour. When the chicken + rice are done, you are all set. **A variation on this recipe is to add green peppers, mushrooms, some garlic. I like to experiment with ingredients I have on hand, so don't be shy about adding to or experimenting with this basic recipe. I also serve Chicken & Rice with corn as those go really well together. You can just thaw out a bag of frozen corn by rinsing in water and then add it to the slow cooker in the last hour or so. That way it's not too soft...and you can do the same thing with the green peppers. You can add those halfway through the cooking so they are not too soft when serving. Bon appetit!
